Healthy sandwich for breakfast

A quick and simple way to start the day with vegetables and protein is with this nutritious breakfast sandwich! The thick and full spinach feta stuffing is delicious. The filling of spinach and feta cheese has a robust flavour, and mashed avocado is added on top for additional healthy fats. Even better: it just takes ten minutes to prepare.

We could have a morning sandwich for every meal because it is such a flexible concept. With a focus on healthful vegetables and simplicity of assembly, we wanted to keep this recipe clean and straightforward. Furthermore, it is gluten-free.


1)  1 whole wheat English muffin (or bagel thins; we like the gluten-free O’Doughs) 2) 1 egg (or 2 eggs if you want a more filling sandwich) (or 2 eggs, for a more filling sandwich) 3) 3 pinches kosher salt 4) 1 tbsp. olive oil sprinkle 5) 12 oz. fresh baby spinach (or chopped spinach) 6) 1 teaspoon garlic powder 7) 14 cup feta cheese, uncut tomato a quarter of a mashed, ripe avocado


Step 1- You should toast the English muffin or some people prefer to use brown bread as it is easily available. Step 2- Beat the egg and add some salt and freshly ground pepper. Step- 3 Sprinkle olive oil into a small nonstick skillet set over medium heat. Step 4-    Season the spinach with 1 teaspoon of salt and 1 teaspoon of garlic powder. Step 5- Cook, stirring occasionally, for 2 minutes, or until the spinach is wilted. The spinach should be evenly distributed across the bottom of the pan. Step 6 -Pour the egg into the pan and spread it evenly across the bottom with a spatula/or the pan Step 7- Cook for 2 minutes, so that the feta cheese is mostly set, without flipping. Step 8- After the egg has mostly been set, fold it in half again to form a wedge. Step 9- Place the avocado on top of the sandwich after mashing it with one more pinch of salt, this would be the finishing part of our sandwich.
