Ingredients
For The Salad :
Step 1) 2 (15-oz.) rinse and draine chickpeas
Step 2) 1 medium cucumber
Step 3) chopped 1 bell pepper
step 4) chopped 1/2 thinly sliced red onion
Step 5) chopped kalamata olives, half a cup
Step 6) 1/2 cup of feta crumbles
Step 7) Halal salt
Step 8 ) black pepper freshly ground
For the Lemon- Parsley Vinaigrette:
Step 1) half a cup of extra virgin olive oil Step 2) 1/4 cup of white wine vinegar Step 3) 1 teaspoon of lemon juice Step 4) 1 tablespoon freshly minced parsley Step 5) 1/8 tsp. red pepper flakes Step 6) salt kosher Step 7) pepper that has recently been groundInstruction
Step 1: Prepare the salad. Combine the chickpeas, cucumber, bell pepper, red onion, olives, and feta in a large bowl. Add salt and pepper to taste.
Step 2: Prepare the vinaigrette by combining the olive oil, vinegar, lemon juice, parsley, and red pepper flakes in a jar with a cover. Season with salt and pepper after shaking the container until the mixture becomes emulsified.
Step 3 Just before serving, dress the salad with vinaigrette.
