Wheat Dosa

In order to make the batter for this dosa, the wheat is first soaked in water for an entire night before being ground into a fine paste with additional ingredients like curd or yoghurt to give it even more flavour. Ingredients 

1.  1/4 cup rice flour and 1 cup whole wheat flour 2.  1/4 cup chopped onions or 1/4 cup shallots 3.  1 teaspoon of curry leaves, chopped 4.  1/2 teaspoon of ginger, coarsely chopped 5.  1.5 teaspoons of cumin seeds 6.   asafoetida 7.  1 teaspoon of lemon juice. 8.  Salt to taste .  

Instruction 

1. Combine 1/4 cup rice flour and 1 cup whole wheat flour (atta) in a mixing dish. Sift your flour once or twice if it contains a lot of bran or is coarser wheat flour. The rice flour contributes to the dish’s crispiness. 2. Include the following components: 1/4 cup chopped onions or 1/4 cup shallots 1 teaspoon of curry leaves, chopped 1/2 teaspoon of ginger, coarsely chopped 1.5 teaspoons of cumin seeds a little amount of asafoetida 4. Mix thoroughly. Break up any little atta lumps that resemble wet sand while combining. To mix the batter, you can also use your hands. You can even use a wired whisk. 5. To add some tang, add 1 teaspoon of lemon juice. Salt to taste and season as desired. Add again. 7. This image demonstrates the consistency. For around 30 minutes, keep the bowl covered and let the batter rest. 8. Water will start to float on top after 30 minutes, and the flours will sink to the bottom. 9. Before beginning to cook the wheat dosa, properly stir the batter one more. 10. Preheat the tava, a skillet, or a nonstick pan. Allow the skillet or tawa to heat up. Use a small cotton cloth, paper serviette or half of a sliced onion that has been dipped in oil to grease the pan. To prevent the wheat dosa from sticking while cooking, use a cast-iron tawa, pan, or skillet that has been well-seasoned. 11. Pour the batter with a ladle. Beginning at the edges, work your way inwards to the centre. 12. Fill any gaps, no matter how big or how small, with a thin layer of batter. 13. Prepare the godhuma dosa over low to medium heat. 14. When the top side appears to be cooked, drizzle a teaspoon to a tablespoon of oil from the top and spread it evenly over the atta dosa with a spoon. If you like, you can alternatively substitute butter or ghee for the oil. Use coconut oil or another oil with a neutral flavour. 15. Compared to conventional Dosa, wheat flour Dosa requires a bit more time to prepare. so, cook until the base is crisp and brown. 16. Flip the godhuma dosa over and cook the other side after the base is golden or crisp. 17. Continue to cook the second side until crisp and with golden spots . 18. Flip it . 19. fold it and serve hot dosa with chuteny or any curry
